How long until organic traffic replaces our ads?

It does not happen in a month. Expect three to six months before organic becomes a meaningful share, and keep ads running through that period. Anyone promising faster is guessing.

We are a small course with two teachers. Is this overkill?

The enrolment and follow-up part is not — that is where small providers lose the most. Full reporting and dashboards usually are, at that size, and we will say so rather than sell them.
